Healthy Easter Egg Recipe

Easter is a time for family, friends, celebration and introspection. Easter means something different to each of us, and often involves coming together to recognise this time of renewal. Tradition recognises the symbolism of the Egg, as it represents new life and rebirth. And in the medieval period it was forbidden for people to eat eggs in the days leading up to Easter, so enjoying eggs at Easter became a real treat. And enjoying Easter eggs is still a treasured ritual at Easter time. 

In this age where we are becoming more mindful around what we are eating, and the impact that processed sugar has on our health, it is important to have healthy recipes we can use at a time when eating chocolate eggs is popular.

Here we have a healthy Easter egg recipe that combines the health-promoting benefits of Manuka Honey, Tahini and Cacao with protein rich Peanut butter to give a delicious, healthy twist on the traditional Easter egg.

Why use Manuka Honey?

We use Manuka Honey for the following reasons-

  • Manuka Honey means you can use less honey than sugar and still get the sweetness you're used to.
  • Manuka Honey also gives you a nutrient-full natural sweetener that is rich in vitamins, minerals, antioxidants, enzymes, prebiotics, as well as having anti-inflammatory and anti-bacterial properties. 
  • Using white, processed sugar only provides sucrose, which research shows contributes to inflammation in the body.

Nutritional Benefits

The nutritional benefits of our healthy Easter egg recipe includes-

  • Vitamins C, E, and B complex; calcium, copper, iron, magnesium, manganese, phosphorous, potassium and zinc; amino acids, prebiotic oligosaccharides and methylglyoxal (MGO).

Tahini

  • Protein, calcium, iron, potassium, phosphorous, manganese, thiamine and vitamin B6.

Cacao

  • Iron, phosphorous, magnesium, potassium and fibre. 

Peanut butter

  • Protein, magnesium, manganese, folate, B3, antioxidants, and is rich in healthy fats.

So you see, a simple swap from processed ingredients to nutrient rich, raw ingredients can elevate your Easter egg experience to a new level, not only is it great tasting, but is also a health-full superfood treat. Enjoy!

Healthy Easter Egg Recipe

Ingredients

1/2 Cup of natural Peanut Butter (choose preference for smooth or chunky)

2 Tablespoons Tahini

2 Large Tablespoons Coconut flour (OR substitute - Almond flour)

2 Large Tablespoons Manuka Honey (to taste)

Generous pinch of sea salt

Method

Combine peanut butter, tahini, coconut flour (or alternative), Manuka Honey and sea salt in a medium bowl until dough is formed, add more coconut flour to firm if needed. Mixture needs to be able to be moulded into shape. 

Break off pieces (about 1-2 tablespoons in size) and form into the shape of an egg. Place on a lined baking sheet or plate and freeze for around 1 hour.

Coating

1/2 Cup of coconut oil

1/2 Cup Cacao powder

3 Tablespoons Manuka Honey

1/2 teaspoon Vanilla extract

Method

Gently melt coconut oil - do not overheat. And combine with cacao powder, Manuka Honey and vanilla extract.

To put together

Remove peanut butter eggs from the freezer, using a skewer to hold the egg, dip each egg into the chocolate (one by one), and tap gently to remove any excess chocolate. Place back on the lined plate.

Once all the eggs are coated, use any remaining chocolate mix to drizzle over the eggs and place them back into the freezer. Leave for 5-10 minutes, remove when ready to eat. 

Note

  • Store any leftovers in the freezer and remove a few minutes before eating. they will freeze solid, but will defrost quickly.
  • If you prefer a more solid coating, that only requires refrigeration - melt 1/3 Cup dark chocolate melting drops and follow the instructions as above.
